Ghormeh Sabzi (Braised Herbed Stew)

Ghormeh Sabzi is a rich Persian dish, typically made with beef. However, you can substitute mushrooms and tofu if you like. Serve with rice and Tahdig (crispy rice).

My mother makes this traditional Persian stew using black-eyed peas. However, you will find Ghormeh Sabzi made with red kidney beans in fine Persian restaurants.
