Gluten-free Chocolate Chip Cake

I recently found cassava flour and decided to use it in a gluten-free dessert. I added almond flour to the mix in order to make it more flavorful. I used monk fruit powder as sweetener, but you can use sugar for a sweeter dessert. You don’t need a leavening agent for this flour.

Ingredients:

1 cup cassava flour

1 cup almond flour

1/2 cup monk fruit powder (or 1/2 cup sugar)

1/8 teaspoon salt

1 teaspoon vanilla extract

1 teaspoon cacao or Matcha powder (optional)

1/2 cup dark chocolate chips

2 large eggs, room temperature

Directions:

1 – Combine all the ingredients in a large bowl.

2 – Transfer to a cake or loaf pan.

3 – Bake in a 350 degree oven for 25 minutes.
