I had leftover Almond and Date pulp from making almond milk, so I decided to make an easy, gluten-free almond cake. It was a big hit at our home.
2 cups almond flour, sifted
1/4 cup Turbinado sugar (or brown sugar)
1 teaspoon vanilla extract
1 teaspoon baking soda
1/4 cup orange juice
(You can omit the sugar and just use orange juice if you prefer)
- In a large bowl combine all the ingredients.
- Pour the mixture into a greased baking pan or cake pan.
- Bake in a 350 degree oven for 35 to 40 minutes.
